If you’ve been reading my blog for awhile, you know that I am a pumpkin addict. I cannot wait for the holidays or fall weather to roll around to get my fix. I’m eating this squash (yes it is) twelve months of the year! These Pumpkin Spice Muffins with a simple glaze are full of pumpkin flavor and a hint of spice which fill my addiction. Pumpkin Spice Muffins are perfect for breakfast, dessert, or a snack. They’re not too sweet and are rather low in fat.

Feel free to add additional cinnamon, nutmeg and, ground cloves, or get creative. You can spice up your muffins anyway you like. Add some crushed hazelnuts, a splash of vanilla, or anything that makes you smile! Enjoy! 

Pumpkin Spice Muffins

  • 1/4 cup butter (softened)
  • 1/2 cup sugar
  • 1/4 cup brown sugar (packed)
  • 2/3 cups canned pumpkin
  • 1/2 cup buttermilk or sour milk
  • 2 Large eggs (slightly beaten)
  • 2 Cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 Teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 cup powdered sugar
  • 2 Tablespoons milk or almond milk


Step 1
In a large bowl, cream butter and sugars until light and fluffy. Beat in the pumpkin, buttermilk, and eggs.
Step 2
Combine the flour, baking soda, baking powder, pumpkin pie spice, and salt; gradually add to pumpkin mixture just until blended. Fill greased or paper-lined muffin cups two-thirds full.
Step 3
Bake at 375 degrees for 20-25 minutes for regular muffins, or 12-15 min for the mini muffins, or until a toothpick inserted in the muffin comes out clean.
Step 4
Cool in pan for 5 minutes before removing to a wire rack. Spoon glaze over the cooled muffins.
Step 5
Combine powdered sugar, cinnamon, and milk, until desired consistency. Spoon over muffins and let set.
